Well there is a horsepower difference, and driving style, but it is mainly just a marketing thing to get you to buy the car.

GT, Shelby, and Cobra are all Ford models.
The GT is a 300hp car that costs from 26K to 35K depending on options.
The Shelby GT is a 325hp limited edition car that costs around 40K.
The Shelby GT500 is a special edition car with 500hp and costs 45K to 50K
The Cobra, which stopped production in 2004, was a 390hp car. A good, clean used one will go for around 30K.
Roush and Saleen are tuners who buy Mustangs from Ford and customize them. They range in price from 35K all the way up to 70K.
