Should I paint my 1965 Ford Mustang before I work on the rest of the car?

I have been told to get it painted first because they will strip it and gut it so they can sand blast it and paint it. Do all the mechanical work first and make sure it all works and fits well. Then take it all apart and do the body and paint. Put it back together, add interior and glass, enjoy the car.
